Description
The root of the Taro plant is used to make poi. It is pounded and ground into a paste and has been the staple of Hawaiians since ancient times. Several versions of poi are made. They are one-finger, two-finger, or spoon. One finger is so thick you can scoop it up with one finger. Two finger is thinner and you use two fingers to get enough for one bite. Then there are those who eat it with a spoon.
These fields are famous. They are in Hanalei on the island of Kauai in Hawaii. This image was taken from the look-out point atop the hill before descending the steep road down into the valley where it passes these crops.

Beautiful, well ordered fields and backdrop! I have heard that this poi tastes like glue. Is this true or was somebody kidding me?
Mary Deal replied:
For me, it tastes fermented and like wall paper paste. But when you grow up on it, it's like us eating mashes potatoes.
